And while they are back in school online, I still need to figure out what to feed them for lunch every day.

You guys: These turned out so great!
One thing I love about this recipe is that it's a super kid-friendly activity and recipe in one.
Canyon Bakehouse makes their English muffins pop open the classic way - where you just stab all around the perimeter with a fork and they pop open!
That means you don't need a knife to cut them open - and that makes this project super kid friendly!
Pro-Tip: Buy an extra package! My six year old is obsessed with these and kept stealing them to eat plain so buy more than you'll need for the pizzas in case your kids like them as much as mine do!

How to Make English Muffin Pizzasan easy kid-friendly, gluten-free lunch idea!
Ingredients

- 1 package Canyon Bakehouse Honey Whole Grain English Muffins (or use the store locator to find them locally!)
- SAUCE OF CHOICE
- Pizza sauce - 2-3 Tbsp per pizza (pictured on classic pizzas)
- BBQ sauce - 3 Tbsp per pizza (pictured on BBQ pizzas)
- 2 cups shredded mozzarella cheese
- TOPPINGS OF CHOICE
- Mini pepperoni - 10 pieces per pizza (pictured on classic pizzas)
- Crispy bacon - 2 piece, crumbled per pizza (pictured on BBQ pizzas)
- Olives
- Diced bell peppers
- Chopped mushrooms
- Diced grilled chicken
- Fresh herbs
- (or whatever you like on pizza!)
Yield: 8 mini pizzas (4 servings of 2 pizzas each)
Notes: We made two different styles here, one classic with mini pepperonis and one bbq with crispy bacon.
You can make your favorite of the two or try both!
Either way you’ll need at least 1 package of Canyon Bakehouse's Honey Whole Grain English muffins.
I like to present lots of yummy, healthy options for my kids and let them build their pizzas however they like!
Recipe Directions
English Muffin Mini Pizzas Step 1:
Use a fork to stab around the perimeter of each English muffin to split it in half like magic. No knife needed!
Place English muffin halves on a baking sheet.
English Muffin Mini Pizzas Step 2:
Top each English muffin half with 2-3 Tablespoons of the sauce of your choice.
We used tomato-based pizza sauce for the classic pepperoni mini pizzas and a thick Korean style BBQ sauce for the BBQ pizzas.
You do you! Use what you have in your pantry!
English Muffin Mini Pizzas Step 3:
Top the pizzas with shredded mozzarella cheese (or dairy-free cheese if that's your jam!)
English Muffin Mini Pizzas Step 4:
Add toppings of your choice on top of the shredded cheese.
For the classic pizzas, we did about 10 mini pepperonis.
The BBQ pizzas got 2 slices worth of crumbled, crispy bacon.
Set out a topping buffet and let your kids go to town!
English Muffin Mini Pizzas Step 5:
Bake pizzas in a 400(F) / 205(C) oven for 12-15 minutes or until the cheese is your desired level of brown.
Let pizzas cool for 5-10 minutes before serving.

Sauce options

- BBQ sauce - 3 Tbsp per pizza (pictured on BBQ pizzas)
Toppings
- Shredded mozzarella cheese (pictured)
- Mini pepperoni - 10 pieces per pizza (pictured on classic pizzas)
- Crispy bacon - 2 piece, crumbled per pizza (pictured on BBQ pizzas)
- Olives
- Diced bell peppers
- Chopped mushrooms
- Diced grilled chicken

Instructions
- Preheat oven to 400(F) or 205(C)
- Use a fork to stab around the perimeter of each English muffin to split it in half like magic. Place English muffin halves on a baking sheet, internal side up.
- Top each pizza with about 2Tbsp sauce of choice, 1/4 cup shredded mozzarella cheese and toppings you choose.
- Bake in preheated oven for 12-15 minutes until cheese is melted and beginning to brown.
- Allow to cool for 5 minutes before serving.
