- 4 ROXY™ Organic Chicken Breasts from Draper Valley
- 2 slices provolone cheese, cut in half
- 12-16 stalks of asparagus, bottom 2 inches cut off
- 2 Tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1 tsp dry thyme leaves
- 2 Tbsp butter
- 1 onion, chopped
- 1/2 cup shredded Italian cheese blend
- Fresh thyme sprigs for garnish if desired

Use a sharp knife to cut each chicken breast sideways, about 75% of the way through to create a pocket.

Drizzle each side of the chicken breast with extra virgin olive oil and sprinkle with salt, pepper and dry thyme.

Heat a cast-iron skillet on medium heat for 5 minutes.
Melt 2 Tbsp butter in the skillet and add the chopped onion and sauté for 3-4 minutes until fragrant.

How to cook One Skillet Asparagus and Provolone Stuffed Chicken Breasts
- Preheat the oven to 380 F (190 C)
- Use a sharp knife to cut each chicken breast sideways, about 75% of the way through to create a pocket.
- Lay half a slice of provolone and 3-4 stalks of asparagus inside the pocket of each chicken breast.
- Mix the salt, pepper and thyme together in a small bowl.
- Drizzle each side of the chicken breast with extra virgin olive oil and sprinkle with the herb mixture.
- Heat cast iron skillet on medium heat for 5 minutes. Melt 2 Tbsp butter in the skillet and add the chopped onion and sauté for 3-4 minutes until fragrant.
- Add the chicken breasts on top of the onions and cook for about 4 minutes before flipping over.
- Cook on the other side for 4 minutes before topping with shredded Italian cheese blend.
- Move the skillet to the preheated oven for 10-15 minutes or until a thermometer inserted in the thickest part of the thickest chicken breast reads 165 degrees F (74 C).
