Energy Ball Ingredients

  • 1 bar - Wild Harvest 85% Cacao Belgian Dark Chocolate
  • 16 ounces (1 jar) - Wild Harvest Organic Creamy Peanut Butter
  • 1 Tbsp - Wild Harvest Organic 100% Pure Maple Syrup
  • 2 packs - Wild Harvest Organic Original Instant Oatmeal
  • 1/4 cup - Wild Harvest Organic Flax Seeds, ground
  • 1/4 cup - organic chia seeds
  • 1 1/2 cup - Wild Harvest Organic Coconut Flakes, divided
  • 1/2 cup - Wild Harvest Organic Jumbo Raisins

Directions

Vegan Chocolate Peanut Butter Energy Balls Step 1: 

Unwrap the chocolate bar and chop it up with a knife. Set aside.

Vegan Chocolate Peanut Butter Energy Balls Step 2: 

Use a coffee grinder, herb grinder (or a blender in a pinch) to grind the 1/4 cup of organic flax seeds.

Grinding them up makes it easier for your body to digest them and extract the maximum amount of nutrition from them! Set aside.

Vegan Chocolate Peanut Butter Energy Balls Step 3: 

In a medium bowl, combine the jar of peanut butter, 1 tablespoon maple syrup, 2 packs of instant oatmeal, the ground flax seeds, 3 tablespoons chia seeds, 1/2 cup coconut flakes, 1/2 cup raisins and the chopped chocolate.

Mix well and refrigerate for 15-30 minutes.

Vegan Chocolate Peanut Butter Energy Balls Step 4: 

Remove the energy ball dough from the fridge. Fill a small bowl with the remaining 1 cup of coconut flakes.

Roll dough into 1-2 Tbsp balls. (I used a 1 Tbsp scoop to make it easier!)

Toss rolled balls in the bowl filled with coconut flakes before setting on the cookie sheet.

Move the cookie sheet with the energy balls to the freezer for an hour before moving to an airtight storage container and keeping in either the fridge or freezer.

To store them longer, keep them in the freezer and move about a week's worth to the fridge at a time.

PRO TIP: Packing these for lunch? Keep them in the freezer and pack them frozen. By lunchtime, they will be defrosted and ready to eat!
