Super Antioxidant Boost Smoothie Bowl

Cancer. It's an ugly word that has touched far too many in my life - and if the statistics hold true, probably in yours, too.

This recipe was originally created in 2017 as part of a campaign against breast cancer. 

And because I wrote THE book on smoothie bowls, of course, I wanted to put together a nutrition-packed smoothie bowl recipe just for this occasion!

Smoothie bowls are perfect for getting lots of nutrient dense foods broken down in a blender to make them easier to digest - and because they are so pretty it's like a special little pretty treat just for you!

I designed this recipe with cancer patients in mind but it's superfood packed and great for anyone - whether you are a cancer warrior or not!


With cancer warriors in mind, I included:
  • Carrots - Which contain compounds which have been shown to boost the effectiveness of chemotherapy (and are generally great for you!).
  • Coconut milk - the creamy texture can help combat dry mouth and contains good fats.
  • Chia seeds - to promote healthy digestion
Whip up this nutrient-dense bowl for a loved one going through or recovering from cancer treatment.

Food is a great way to show your love and care for someone and this nutritious smoothie bowl is no exception!

Of course, this beautiful bowl is nutrition-packed and delicious even if you aren't going through treatment - put it on your healthy meal rotation (especially during the summer when it's too hot to cook!) to keep your body fueled with nutrient-dense foods, good fats, fiber and more.


Ingredients


Smoothie Bowl:
Toppings:
  • 2/3 cup fresh raspberries*
  • 2/3 cup fresh blueberries*
  • 1/2 cup gluten free granola
*Creative Green Living recommends purchasing these ingredients as organic where available to avoid GMOs and pervasive pesticides - which is especially important when undergoing cancer treatment.

Yield: 2 Smoothie Bowls



Directions

STEP 1 

Add carrots, coconut milk, honey, coconut water, and chia seeds to your blender.

Blend on high until carrots are well blended and mixture is smooth.

Add frozen fruit and continue blending until smoothie is blended and no chunks remain. Add additional coconut water during blending if mixture is too thick to blend.

STEP 2

Pour finished smoothie into bowls (smoothie makes 2 servings) and top with fresh berries and granola.

STEP 3

Serve on a pretty tray along with a cup of fresh brewed tea.

Ingredients

Smoothie Bowl:
  • 2 medium carrots, tops and tips removed, rough chopped
  • 3/4 cup full fat coconut milk 
  • 1 Tbsp raw honey 
  • 1/2 cup coconut water 
  • 2 Tbsp whole chia seeds
  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 1 cup frozen strawberries*
Toppings:
  • 2/3 cup fresh raspberries
  • 2/3 cup fresh blueberries
  • 1/2 cup gluten free granola 

Instructions
