Sweet Kale Smoothie Bowl

Do you ever have a weeknight where you are too tired to cook? Or it's hot out and you don't want to warm up the house even more by cooking? I'll admit it: I've had several of these nights lately. Instead of ordering a pizza, though, I've been making smoothie bowls - and my family is loving it!

Making a smoothie bowl takes less time than picking up take-out and is SO MUCH BETTER for you. Plus, when you make your smoothie bowls extra thick, your kids will feel like they are eating ice cream for dinner - but it's actually full of healthy fruit, seeds and veggies. WIN!

Let's hop into the recipe shall we?




Ingredients

  • 2 large handfuls Sweet Kale blend*
  • 1 Tbsp flax seeds*
  • 1 Tbsp chia seeds
  • 1 cup coconut water*
  • 1 kiwi, peeled
  • 1 cup frozen pineapple
  • 1 cup frozen peaches*

Toppings

  • Sliced kiwi*
  • Chia seeds
  • Fresh blackberries*
  • Young coconut chunks
  • Sliced almonds
  • Fresh raspberries*
Yield: 2 large servings

*Creative Green Living recommends purchasing these ingredients as organic where available to avoid GMOs, pervasive pesticides and/or questionable farming practices. Organic food is better for you and for the environment!



Directions

STEP 1 - Blend Greens

Add the sweet kale blend, flax seeds, chia seeds and coconut water to a blender and blend until no more chunks appear.

STEP 2 - Add Fruit

Add kiwi, pineapple and peaches. Blend until smooth. Add more coconut water if needed for easier blending. To thicken smoothie, add more frozen fruit.

STEP 3 - Add Toppings!

Pour smoothie into two bowls. Top with your favorite fruit and nuts! I used sliced kiwi, chia seeds, fresh blackberries, young coconut chunks, sliced almonds and fresh raspberries.


For the same smoothie bowl, my son chose blackberries, raspberries and chia seeds. Pretty classy for a five year old, if I do say so myself!
